Ingredients:
Shortbread base
½ Cup butter softened
¼ Cup powdered sugar
1 Cup flour
Lemon Filling:
2 Large eggs
1 Cup granulated sugar
½ Teaspoon baking powder
3 Tablespoons lemon juice
1 Pinch salt
Zest of ½-1 lemon
Pre-heat oven to 350F and grease a square pan
In a mixing bowl combine butter and powdered sugar. Then add your flower until you get a soft dough. Put it evenly in your oven and bake for 18-20 mins. LEAVE THE OVEN ON.
While your shortbread is cooking beat together the eggs, and granulated sugar. Baking powder, fresh lemon juice, and a pinch of salt and zest. Pour over the warm short bead and put it back in the oven for 20-25 minutes. Chill in the fridge for an hour, cut, dust with powdered sugar, and then enjoy!
